1. Cassava chips

  • 4 cassava tubers
  • 2 tablespoons of olive oil (30 ml)
  • 1 pinch of black pepper
  • 1 pinch of sea salt
  • 4 cups of water (1 liter)

Preparation

  • First, wash the cassava well and set it aside.
  • Boil water with salt and pepper.
  • Slice the cassava and put them in the pot.
  • Cook for 15 minutes until soft.
  • After the indicated time has elapsed – drain and put on a baking sheet.
  • Sprinkle with olive oil and season with salt.
  • Preheat the oven to 170 ºC. Bake for 5 minutes on each side (turn them over) until golden brown. 

2. Eggplant vegetable chips

Eggplant is an interesting challenge because it is a vegetable quite engaging in preparation. First of all, the water should be drained from it and the characteristic bitterness should be removed.

Ingredients

  • 2 cups of eggplant slices (160 g)
  • 1 bunch of parsley
  • 1 onion
  • 2 tablespoons of olive oil (30 ml)
  • 1 pinch of ground black pepper
  • 1 tablespoon of powdered cumin (15 g)
  • 2 cloves of garlic (7 g)

Preparation

  • Start by cutting the onion into small strips (julienne). Drizzle with olive oil, then add a little pepper and powdered cumin. Set aside.
  • Then spread the eggplant pieces on the baking sheet and add salt. Leave for 15 minutes.
  • Finely chop the parsley and mix with the mashed garlic cloves and pepper.
  • After 15 minutes, place the pieces of onion and parsley pesto on the prepared eggplant pieces.
  • Preheat oven to 170 ° C. Bake the crisps for 25 minutes. Halfway through the suggested time, flip them over. So that they are evenly covered with a golden color.
  • Take out of the oven and crunch with your favorite dip!

3. Broccoli vegetable chips

  • 4 cups of broccoli (320 g)
  • 3 tablespoons of vegetable oil (45 ml)
  • 2 tablespoons of oat flakes (30 g)
  • 1 pinch of powdered marinade
  • 1 pinch of salt
  • 2 eggs

Preparation

  • Prepare beaten eggs first (as for an omelette).
  • In a frying pan, heat a tablespoon of oil.
  • Coat the broccoli in oatmeal and marinade.
  • Soak the broccoli in the beaten eggs and repeat the procedure with the marinade and oatmeal.
  • Then add some salt and pepper to the vegetables.
