Creamy pasta without cream and cheese – preparation
First step
- Cut the onion and garlic into small cubes on a chopping board.
Step two
- In a medium sized pot, heat the olive oil for about a minute. Keep a little fire.
- Add the onion and garlic to the pan. Sauté.
Step three
- When the vegetables are translucent, add the white mushrooms (or other mushrooms if you don’t have this variety).
- At the same time, add the soy sauce and cover the pot to let the sauce simmer slowly.
Fourth step
- When the vegetables and mushrooms are properly cooked, increase the heat to reduce the amount of water in the mushrooms, causing it to evaporate.
Step five
- Add the yoghurt, stirring constantly, and then reduce the heat again. Reducing the temperature and stirring will prevent the yogurt from settling and losing its creamy texture.
- When the whole thing is thoroughly warm, do not let it overcook and top it with a special accent, sprinkling it with finely chopped parsley.
Step six
- In a large pot, cook the pasta, remembering to salt the water first.
- Drain the pasta when it’s al dente.
- Mix the pasta with the creamy vegetable and mushroom sauce and prepare your palate for the moments of delight you will experience thanks to the perfect combination of taste and texture.
