An important ingredient in our today’s pear tart is also rice flour. Did you know that you can prepare it yourself at home with a blender or coffee grinder? It is enough to grind grains of white or brown rice to coarse or fine dust.

The great advantage of rice flour is that it does not cause allergies or allergies. In addition, it is much less caloric than wheat flour, and also has a lower glycemic index.

Tart with pears is a very simple baking, the basis of which is a delicate and fluffy cake. Although today we present a version with a pear in the lead role, you might as well use apples or any other seasonal fruit.

The recipe for the following cake is a proposal for a classic “pear” or apple pie. The bottom is a fluffy cake and the top is fruit. If you want, you can prepare a fruit mix, combining, for example, pear with apple, pomegranate, pumpkin, cranberry, wild fruit, etc.

  • 2 large ripe pears
  • 2 eggs (60 g)
  • ½ cup of applesauce (100 g)
  • ½ glass of natural yoghurt (preferably Greek) (100 g)
  • 2 tablespoons of rice flour (30 g)
  • ½ cup of brown sugar (100 g)
  • 3 tablespoons of ground almonds (45 g)
  • Freshly squeezed juice from one lemon
  • Ground cinnamon (to taste)
  • Pinch of salt

A method of preparing

  1. First, preheat the oven to 180 ° C.
  2. Then grease a medium-sized pan or line it with baking paper. You can also use a special form for baking muffins – this way you will get ready-made portions and you will not have to cut the dough.
  3. The next step is to wash and cut the pears into thin slices. To do this, cut the fruit in half, remove the seed nests and slice. Put them in a bowl, drizzle with lemon juice to keep them from darkening, and set aside for a while.
  4. Now take care of the eggs. Separate the whites from the yolks.
  5. In a bowl, mix yogurt, egg yolks, sugar and applesauce. Keep mixing until you get a homogeneous mass.
  6. Then add ground almonds, rice flour, cinnamon and a pinch of salt to it. Stir well so that all lumps are gone.
  7. In another dish, beat the egg whites until stiff.
  8. Slowly add the foam to the prepared dough, stirring constantly – but gently so that the foam does not fall off.
  9. Finally, pour the dough onto a greased or baking sheet lined with baking paper. Place the pear, thinly sliced, on top. Press them a little into the dough. Sprinkle lightly with powdered sugar and cinnamon.
  10. Put in a preheated oven for about 40 minutes. Watch the dough, and when the top is appetizingly golden, insert a stick into it to make sure that the pear tart is well done.
  11. Cool the dough and serve it to plates!
